KETO-LOCA® Dutch Goat's Feets Biscuits
This popular Dutch biscuit is a familiar favourite to many in the Netherlands, and the homemade version is the tastiest!
Ingredients
- 100 grams of almond flour
- 40 grams of sugar (erythritol)
- 10 grams almond meal (finely ground)
- 2 egg whites
- 1 teaspoon vanilla extract
- KETO-LOCA® Dark Chocolate
Get baking!
- Preheat the oven to 125 degrees and line a baking tray with baking paper.
- Beat the egg whites until stiff, together with the vanilla extract and add the sugar little by little.
- Add the almond flour, but carefully so that the batter remains light. So do not stir but fold in a little.
- Put this mixture in a piping bag and pipe the batter on the baking tray covered with baking paper. You do this by drawing thick stripes on the baking paper 16 pieces (for 8 biscuits) and then sprinkle them with the almond shavings.
- This goes into the oven for 40 minutes, then let the biscuits cool completely. Then turn everything over (this will be easier to work with later)
- Meanwhile, make the filling, use 2 tsp lemon curd left and mixe it with 3 tsp mascarpone. Taste to see if it is sweet enough. The filling should be a little stiff otherwise put it in the fridge for a while. (Melt everything and let it harden in the fridge).
- Fill a piping bag with the filling and pipe some over one side of the bokpots and place the other side on top.
- Finally, when all the feet are filled, melt KETO-LOCA® dark chocolate. Dip the ends of the biscuits in the melted chocolate. Then place back on the baking sheet to allow the chocolate to harden. Once the chocolate has hardened, your biscuits are ready!
Ps: Any leftover filling? Delicious for in your Greek yoghurt.
